It's that time of year already. Our chemical-free lawn is starting to ... bloom. Each spring I try very hard to embrace the cheerful yellow blossoms dotting the grass. Last night we took the embracing to another level -- a side-dish level, to be precise.
The boys carried a basket around the yard to gather the finest specimens. I mixed up a (grain-free, dairy-free) batter with egg, almond flour, hemp milk, salt, and stevia.
Then I liberally dunked those sunny-yellow blooms until well-coated.
I used kitchen shears to behead them on their way into a pan of sizzling coconut oil. Fry until golden; flip and repeat. This smelled amazing.
The verdict? Mixed. Charlie took one hopeful bite ... and then quietly returned the remains to the serving basket. Eric agreed with this assessment. I found them to be so-so. I definitely preferred them with dip (we served them with a creamy mustard sauce). But Henry loved them. He ate every last one -- and is now sincerely looking forward to the sea of yellow dots that will be popping up soon. Embraced, indeed!
